125 grams almonds
25 grams macadamia oil
40 grams maple syrup

Chocolate Coating
100 grams cacao paste
20 grams coconut oil
40 grams maple syrup
pinch of salt

For the nut butter: Place almonds in Thermomix with the oil and chop 15 seconds, speed 9. Scrape down sides and mix 10 seconds, speed 5.
Roll into egg shaped balls and place in container in freezer for at least 60 minutes.

For the chocolate: Add paste to Thermomix bowl and melt 10 minutes, 45 degrees, REV, speed soft.
Add oil, syrup and salt and mix 10 seconds, REV speed 2.
Roll eggs in chocolate and place on non-stick paper, allow to set in fridge.
Try not to eat them all at once.

TIP: Cacao paste can be quite expensive and hard to find, so see below for my alternative chocolate recipe:

125 grams cacao butter
30 grams coconut sugar
75 grams raw cacao powder
pinch of salt

Add cacao butter to Thermomix and chop 20 seconds, speed 8.
Scrape down sides and add remaining ingredients.
Cook 10 minutes, 37 degrees, speed 1. Scrape down sides again cook further 10 minutes. 37 degrees, speed 1.
Blend 10 seconds, speed 5.
Pour into chocolate mold’s or lined tray and place in refrigerator to set.
