I have to start by saying make sure you allow at least two days to make this, three if you have it.

Almond Feta (makes approx 100 grams)

100 grams almonds (blanched if you want it to look nicer)
1 1/2 Tablespoons lemon juice
2 Tablespoons extra virgin olive oil
1 clove of garlic
1 teaspoon sea salt
100 grams water

First you need to soak your almonds in filtered water, at least six hours, or overnight if you can.

Drain your almonds and set aside. Add garlic clove to Thermomix bowl and chop 3 seconds, speed 7, then add all remaining ingredients to your Thermomix and process until smooth. I did 2 minutes, speed 9, then scrape down sides, if it is not smooth add a few more tablespoons of water and repeat until smooth.

Remove the mixture from your Thermomix and place into a small sieve that has been lined with fine cheesecloth. Place this sieve over a bowl to catch the draining water and refrigerate overnight. This not only removes the excess water, but also improves the flavor by allowing the flavors to combine. I left mine 48 hours.

Now you have a few options, you can eat as is, or you can bake it or dehydrate it.
For dehydration I left in dehydrator on lowest setting for 24 hours.
You can also bake it for 35-40 mins at 180 degrees, which gives it a crumblier texture.

This should last about 5-7 days in the fridge.

you could also add herbs or spices at the blending step for alternative flavours.
