1 red chilli, halved and deseeded (if desired)
1 tbsp chopped turmeric fresh (or 1tsp dry)
1/4 cauliflower roughly chopped
1 large zucchini, chopped into 4
1/2 head of broccoli, roughly chopped
1 stick of lemongrass, cut into 1 cm pieces
1/2 bunch of kale, leaves shredded from stalks
10 curry leaves
2 tbsp fish sauce

Add chilli and lemongrass to Thermomix bowl and fresh turmeric if using. Chop 3 seconds, speed 7.
Add remaining ingredients and chop 10 seconds, speed 5.
Now you can either pour into a baking dish and bake in the oven for 25 minutes at 180 degrees until golden brown on the top, or add 20 grams coconut oil and cook in your Thermomix bowl, 10 minutes, 100 degrees, REV, speed 1.
Serve with your desired protein, I had my leftover oxtail rendang, so yummy.
