4 cups thinly slice fennel
1/2 red onion
3 red bell peppers (capsicum)
3/4 cup vegetable stock
1 tbsp ground fennel seed
1 tbsp dried basil
ground pepper to taste
2 cloves garlic crushed
1 1/2 tbsp chope fennel leaves
1 tsp. fish sauce

Heat oil in large saucepan over med-high heat
Add fennel, onion, bell pepper and saute 6 mins, stirring occasional.
Once caramelised, add remains ingredients, except fennel leaves, turn down to a simmer for 15-20mina or until tender
seve with fennel leaves and fish sauce if needed.
