I used to love pizza, but even gluten free pizzas are not Paleo friendly.
I had tried a few cauliflower pizza base recipes, most contain dairy and egg so I was keen to create my own and now I can share it with you.

Serves 1
1/4 a large cauliflower cut into florets
1 tbsp ground flax mixed with 3 tbsp water (leave to sit for 5mins)
2 dried porcini mushrooms (optional)
1 tbsp mixed herbs
1/2 tsp salt

Pre-heat oven to 220 degrees celsius
Add all ingredients into Thermomix and mix 5 seconds, speed 6.
Form into pizza shape onto non stick tray or baking paper about 1/2-1cm thick
Bake 20 mins or until starting to turn golden brown
Remove from oven and cover with your choice of toppings.
Bake further 10 minutes or until your toppings look cooked.
