Cricket Flour Protein Balls

Have you tried cricket flour yet? If you haven’t now is time, high in protein, no carbs, virtually tasteless in recipes, its a fantastic sustainable ingredient to use in your cooking

1/4 cup sunflower seeds
3/4 cup cricket flour
2 tbsp mesquite powder
3 tbsp raw cacao
1/4 cup coconut flour
40ml maple syrup
20ml coconut oil (melted)
1/4 cup water
extra mesquite or cacao to roll in

Add sunflower seeds to Thermomix and grind into flour, 30 secs, speed 9. Add remaining ingredients to  Thermomix and blend 20-30 seconds, speed 5, until mixture comes together. Add extra coconut flour if too moist.  Roll into balls and coat with cacao or mesquite powder. Try not to eat all at once!
