FRUIT & NUT CLUSTERS

I wanted a simple, tasty, healthy bite to share with friends after dinner so I came up with these little creations. You could turn these into bars and use for school lunches or work snacks.

Ingredients

  • 200 grams coconut oil
  • 50 grams raw cacao
  • 50 grams dried apricots
  • 50g dried cranberries
  • 50 grams almonds
  • 50 grams coconut flakes
  • 50 grams pistachios
  • 25 grams cacao nibs

Prepare mini muffin pans with baking paper cups, or line a slice tin with baking paper.
Add coconut oil and cacao to Thermomix bowl. Heat 3 mins, 37 degrees, speed 1. Add remaining ingredients, mix 30 seconds, REVERSE, speed 1.
Spoon  tablespoons of mixture into each pan or spread all of mixture into pan if using slice tin.
Freeze approximately 30 minutes till set.
Keep in sealed container in fridge, will last ages if you don’t eat them all.
Feel free to change the dry ingredients to suit what you have, goji berries, macadamias, pecans, sultanas all are delicious.
