This is a great breakfast option to have on hand when you are travelling. I don’t recommend it as an everyday breakfast option.

100 grams raw almonds
70 grams raw walnuts
50 grams raw macadamias
50 grams raw cashews
30 grams pumpkin seeds
1 tsp. salt
170 grams raw honey
2 tbsp. coconut oil
1 tbsp. vanilla powder
1 tbsp. cinnamon
1/2 cup shredded coconut
2 tbsp. goji berries

MethodCombine nuts, seeds and salt (except macadamia) and soak overnight for 24 hours.

Drain the nuts and seeds and place in Thermomix, chop 5 seconds, speed 5, till nuts are the size of oats. Add honey, coconut oil, vanilla, cinnamon and a pinch of salt. Place Thermomix in lock lid position, press Turbo button twice, holding for one second each time.

Add coconut and stir on rev 5 seconds, speed 5.

Dehydrate for 24 hours at 120 degrees, either in a dehydrator or oven.

Add goji berries and allow to cool completely before storing in air tight container.

Recipe makes approx. 4 cups.
