One of my lovely followers requested that I create a Paleo version of her family favorite cookies, jam drops, so here they are!
Makes 15-20 biscuits
Ingredients
- 50 grams coconut sugar
- 330 grams almond meal (see tip)
- 1 tbsp. coconut flour
- 1 large cold egg
- 70 grams ice water
- ¾ tsp. sea salt
- 45 grams butter (or ghee)
- 1 tsp. honey
- Jam of choice (I prefer raspberry)
Preheat oven to 180 degrees Celsius. (fan-forced)
Place sugar into mixing bowl and mill 15 seconds, speed 10.
Add butter, almond meal, flour, egg, salt and honey and iced water and mix 25-30 seconds, speed 5, till mixture comes together.
Transfer onto pastry mat or board.
Roll into golf ball size rounds and place on tray.
Squash each roll with a melon baller or tsp., making indent in center of each round.
Place 1/ 2 tsp. jam in each indent.
Bake 10 mins, till just golden.
Allow to cool.
Store in an airtight container up to 1 week
Tip: I milled blanched almonds 20 seconds, speed 10 to make meal.
