Nothing is more comforting than lamb shanks. Feel free to change the sauce ingredients to suit your taste, sometimes I add herbs such as rosemary to really change the flavour. This recipe is from my cookbook Mixing it The Paleo Way, you can order from www.paleothermie.com.au
3 – 4 lamb shanks
400 gram tin of tomatoes
1 tbsp. vegetable stock concentrate (from EDC)
250 ml red wine
2 cloves garlic
1 brown onion halved
1 carrot, sliced
40 grams coconut oil or ghee
Place garlic and onion in Thermomix bowl and chop 3 seconds, speed 7.
Add oil or ghee and sauté 3 minutes, 100 degrees, speed 1.
Place shanks in top layer of Varoma.
Add remaining ingredients to Thermomix bowl and
cook for 30 minutes, Varoma, speed 4. With lamb shanks on top.
Check that meat is falling off the bone, otherwise cook further 10 minutes, Varoma, speed 4 and check again.
Great served with Cauliflower rice, mash, pumpkin mash or sweet potato mash.
