Paleo Christmas Cake

Every year I make a yummy Christmas Cake filled with fruit and dark chocolate, but normally also full of refined sugar and wheat, this year i adapted my own recipe to make it GF but also paleo friendly! My husband has already eaten half the cake! its delicious.

1250g dried fruit (soaked overnight in 200ml port/brandy/rum/juice/coffee/crio bru etc)
125 grams ghee
2 eggs
1 tbsp vanilla essence or 1sp vanilla extract
100g dark chocolate pieces (I use loving earth brand)
1 cup (130 grams) tapioca flour
2/3 cup (80 grams) cassava/banana flour or similar
1 tbsp apple cider vinegar
2 tsp baking powder
1 tbsp cinnamon

TIP: THIS YEAR I MADE THIS WITHOUT THE EGG AND SWAPPED THE GHEE FOR COCONUT OIL AND IT WAS JUST AS YUMMY
Line a 23cm deep cake tin with a double layer of baking paper.

Preheat oven to 150 degrees

Mix ghee, egg, vanilla in thermomix speed 5, 30 secs, add flours, vinegar, and cinnamon, mix 30 secs, speed 5, add fruit and chocolate, mix REVERSE speed 5, 30 seconds or till combined

Spoon into pan, bake at least 2 hours.

Check cake is cooked by placing skewer in centre, cake is cooked when skewer comes out clean.

Allow to cool in oven.
