Sticky Lamb Ribs

I decided to try lamb ribs after finding my local farmer selling them dirt cheap, I found a recipe on Not Quite Nigella and adapted it from there and I have to tell you these were delicious!

Serves 4

Ingredients
2 x 800 gram racks of lamb ribs
40 grams olive oil
2 tbsp. sumac
2 tbsp. ground cumin
1 tbsp. salt
1 tbsp. pepper
2 tsp. smoked paprika
2 cloves garlic
1 tbsp. coconut sugar
20 grams fish sauce
20 grams coconut aminos

Method
Place peeled garlic cloves into Thermomix and chop 3 seconds, speed 7, add oil, sumac, cumin, pepper and salt, mix 1 second, speed 4, rub all over lamb and set aside at least one hour to marinade or overnight.
Bake lamb covered in oven, 150 degrees, 2 hours.
Remove from oven and cut into individual ribs. Combine sugar, aminos, and fish sauce, place lamb on a rack over a lined baking tray and coat with the sauce, bake further 10 – 15 minutes until sticky.
I serve with roast pumpkin and sweet potato.
