Strawberry & Nut Butter Muffins

IMG_4875 250 grams teff flour
250 gram water
1 flax egg-1 tbsp flax meal and 2.5 tbsp water
1/2 cup almond butter
1 tsp GF baking powder
1 tbsp vanilla extract
2 tbsp coconut oil, melted
4 tsps coconut sugar or equivalent
100grams frozen strawberries or other berrie

Preheat oven to 180 degrees. Prepare a large muffin tray (6 serves)
Add all dry ingredients (including strawberries) to Thermomix bowl, mix 10 seconds speed 9.
Add wet ingredients, mix 30 seconds, speed 5.
Scrape down sides, repeat.
Pour evenly into muffin tray
Bake 20-25 minutes, till spring to touch and slightly risen.
