Today I wanted to share with you one of my earlier recipes. This recipe is featured in my cookbook, Mixing it The Paleo Way, which you can order from my website. It’s one of my favourite winter breakfast staples, and also yummy with tomato and avocado as a lunch or dinner option. Trust me once you make this once, you will be back for seconds.

340 grams nuts (brazil, almond or macadamia)
1 large sweet potato
4 eggs
40 grams coconut flakes
40 grams coconut oil
1 /2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsps. gluten free baking powder
20 grams apple cider vinegar

Pre heat oven to 180 degrees.
Add nuts to Thermomix and mill 10 seconds, speed 8. Set aside
Add sweet potato to Thermomix bowl and grate , 5 seconds, speed 5.
Add nuts and remaining ingredients, and mix 30 seconds speed 6.
Pour into lined pan. Bake 40 minutes, or until skewer comes out clean.

This is yummy served with cashew cheese!
