50 grams coconut oil
50 grams coconut sugar
½ tsp. vanilla essence
1/ 2 tsp. baking powder (Gluten Free)
½ tsp. bi-carb soda
½ tbsp. apple cider vinegar
130 grams almond milk
50 grams banana flour
50 grams cassava flour
50 grams almond meal
Preheat oven to 180 degrees. Line 12 small or six large muffin trays.
Add oil and sugar to Thermomix bowl and mix 20 seconds, speed 6. Scrape down sides, repeat
Add remaining, mix 5 seconds speed 5, scrape down sides and repeat.
Divide amongst muffin trays. Bake 20 to 25mins until golden brown.
Allow to cool then serve.
I added ½ cup of frozen blueberries to ½ the mixture , just before spooning into tray.
