vegan choc doughnut
1 banana
100 grams water
25 grams coconut oil (melted, I do this first in the Thermomix about 2 mins, speed 1, 37 degrees)
1 tsp baking powder
100 grams teff flour
60 grams raw cacao
100 grams coconut sugar
1 tbsp ground flaxseed
pinch of salt
extra coconut oil for greasing pan

Preheat oven to 180 degrees. Prepare your donut tin by greasing with coconut oil, or similar (you could make as mini muffins if you don’t have a doughnut tin).

Combine all wet ingredients in TM bowl, one minute, speed 4. scrape down sides of bowl.

Add dry ingredients, mix 30 seconds speed 5.

Spoon mixture into tin, about 3/4 of the way up the side of each doughnut hole.

Bake 15 minutes or until doughnuts spring back when touched gently.

Allow to cool slightly before removing from tin.

For the topping I spread almond butter over the doughnut while still warm.
