anzac biscuits
I just had to make a batch of these to share with friends on Australia Day. I converted the Paleo Cafe’s recipe to a Thermomix version. So much easier!

Makes 20 biscuits


  • 150 grams honey
  • 100 grams coconut oil
  • 1 tsp. bicarbonate soda
  • 100 grams coconut flakes
  • 160 grams almond meal
  • 160 grams almond flakes

Preheat oven to 160 degrees Celsius. Line 2 trays with baking paper.

Add honey and coconut oil to Thermomix bowl and heat 3 minutes, 50 degrees, speed 1.

Add bicarbonate and mix 10 seconds, speed 2.

Add remaining ingredients and mix 20 seconds, REVERSE, speed 3, until well combined.

Place 1 tbsp balls of mixture spread evenly on tray, leaving room to spread.

Bake 10 – 15mins till lightly golden.

Allow to cool before storing in an airtight container.
