100 grams almond meal
100 grams banana flour
50 grams tapioca or cassava flour
2 tsp baking powder
50 grams coconut sugar
1 tsp cinnamon
1/2 tsp nutmeg
150 grams non-dairy milk (almond works well)
1 ripe banana
1/2 cup cacao nibs

Pre-heat oven to 180 degrees
Line a muffin tray with cup cake liners 6 large or 12 small
Add all ingredients, except nibs to Thermoomix bowl and mix 1 minute, speed 5
Add nibs and mix 30 seconds, REVERESE, speed 3
Pour into muffin tin evenly
Bake 15-20 minutes until bounces back when pressed in the centre
Allow to cool before serving
Freezes well
