250 grams teff flour
250 grams water
1 flax egg (1 tbsp flax meal and 2.5 tbsp water)
1/2 cup almond butter or similar
1 tsp baking powder
1 tsp vanilla powder
2 tbsp coconut oil melted ( I melt this in the oven as its heating up)
4 tsps coconut sugar or equivalent
30 grams cacao nibs or dairy free chocolate chips

Preheat oven to 180 degrees
Combine the dry ingredients in the Thermomix, speed 4, 10 seconds. Add the wet ingredients and combine 30 seconds, speed 5
Add cacao nibs and mix 10 seconds, REVERSE, speed 3
Pour into 6 large muffin moulds, filling to the top
Bake for 15-20 minutes
Allow to cool before eating if you can!
