As the days get shorter and cooler I find myself eating dinner earlier and earlier, so I need a little something before bed some nights, this is where this delicious custard comes in.  This one is for your Thermomix of course, but you could adapt to the stove top by following any basic method for custard and adding chia seeds at the end.

Ingredients

70 grams chia seeds
250 grams water
250 grams almond milk (or any milk)
2 eggs
1 tbsp. raw cacao
1 tsp. cinnamon
1/2 tsp ground ginger
pinch of nutmeg
pinch of sea salt
1/2 tsp. vanilla paste or extract

Add chia seeds to water and leave to sit for 15-30 minutes
Add all ingredients to Thermomix (including chia) and cook 6 minutes, 90 degrees, speed 4, REVERSE,

Serve over stewed fruits, quince is my favourite or blueberries. Sprinkle with seeds, nuts or coconut flakes for added crunch. Would make a delicious breakfast too.

Tip: Feel like chocolate?? Swap the spices for 1 tbsp raw cacao.
