Sometimes you just need a cookie, and these certainly hit the spot, give them a try and let me know what you think.
CHOCOLATE CHIP COOKIES
50 grams coconut oil
70 grams maple syrup
1 tsp. vanilla bean paste
80 grams tapioca flour
30 grams coconut flour
½ tsp. bicarb soda
½ tsp. salt
30 grams cacao nibs or chocolate chips/broken chocolate (I used Pana Chocolate)
1 tbsp. Great Lakes Gelatin
Preheat oven to 180 degrees
Melt coconut oil in Thermomix bowl, 1 minutes, 37 degrees, speed 1.
Add maple syrup and vanilla essence and mix 20 seconds, speed 2.
Add remaining ingredients except nibs (or choc chips if using), mix 20 seconds, speed 4.
Add nibs and mix 20 seconds, REVERSE, speed 2.
Roll into 9 balls and place on lined baking tray, flatten with a fork and bake 10 mins til golden brown on the edges.
